Street food (street food), as defined by the FAO, consists of a wide range of ready-to-eat beverages and foods that are sold (and sometimes even prepared) mainly in public places, especially on the street.
A type of small establishments specializing in the preparation and sale of street food have spread in the historic centers of some Italian cities.
Palermo is perhaps the Italian city with the most street food-related dishes:
Panelle: simple triangular or rectangular pancakes prepared with chickpea flour, salt and water strictly served hot with salt and lemon.
I cazzilli: potato croquettes prepared with salt, pepper, parsley, garlic and mint. Often served, like panelle, in mafalda, a bun covered with sesame seeds.
Sfincione: flatbread prepared with tomato, onion, anchovies, breadcrumbs and caciocavallo cheese.
The pani ca meusa: sandwich with veal spleen, lung and trachea, flavored in lard.
And so many many others.
